Ask Katie Davies about her cupcake business and she gets really excited. In fact she has so much to tell me I can’t keep up!
Firstly there’s the ingredients. They are so important. She only uses real orange for the orange and chocolate flavour and real lemon for the ‘lemon sparkle’, one of her own creations. She likes to create her own flavours like mint choc chip, her personal favourite, but also traditional flavours like vanilla and chocolate and she always uses quality chocolate like Green & Blacks organic. It’s important she says never to compromise on taste – it’s no good having cakes looking pretty if they don’t taste delicious too.
Katie was born in Cheltenham and has lived here all her life. She went to Cleeve School where she did really well. Her first job was at Naturewatch in Hewlett Road. Naturewatch campaigns against animal cruelty and Katie is very concerned that all the ingredients like the free range eggs, milk and butter are organic and cruelty-free. The ethical side of the business is very important to Katie. This is what differentiates her cupcakes from so many others, she tells me. Even the cleaning products she uses are never tested on animals and all waste is recycled and dealt with properly.
So why did Katie choose to start up a cupcake business? It’s very personal, she says, and she always put the customer first. The customer can choose what they really want and like and she loves it when they are happy. It’s a very satisfying feeling. She is “spreading the happiness”, she laughs.
Katie also set up the business because she wanted the flexibility to work from home when she and her husband start a family in four or five year’s time, but she is still only 25 years old. At the moment she takes orders for birthdays – particularly big ones like 40th or 50th - and anniversaries. Her first order came from a hairdressers’ shop and was from the people getting their hair done! She is also looking to supply cafes but her ultimate ambition is to open an organic and cruelty free coffee shop.
She’s always learning new skills and is even taking a cake decoration course to add to her repertoire.
Cupcakes are priced at around £2 each but they are pretty big and many people struggle to eat a whole one. And the reviews to date have been fantastic. Here’s a selection:
